A fine grit stone is a great tool for pushing the edge a bit further and creating a near-mirro finish on a wide bevel. A #6000 grit stone gives a very refined edge that allows you treat the ingredients with respect by preserving their texture and integrity. In addition, it is a great range to have for most single sided tools sharpening.
Recommended usage: This is a splash-and-go stone, but right out of the box we recommend a 1-2m soak. It excels at creating a refined edge, with just a hint of toothiness on most steels. It also creates a good contrast on laminated wide bevels, though it can leave slight scratches on the soft steel. We highly recommend this stone to anyone seriously interested in maintaining a toothy fine edge on his/her slicers, and polishing wide bevels. Lastly, these Morihei Hishiboshi stones work extremely well as a set, we highly recommend purchasing two to three different grits in the same series to fully benefit from their line up.
