Light floral, dark caramel, apricot


1 year tea, 3 years medicine, 7 years treasure. That is, when it comes to white tea, it starts out as being simply tea in its first year, then by year 3, the flavours are said to be more herbal, tasting almost like Chinese medicine (yum…), and from 7 years onwards, it becomes a treasure – i.e. flavours become more interesting and complex, a host of medicinal benefits are said to appear and of course, prices also go up. This White Peony cake from 2017 has just hit the treasure mark. The age of the tea has allowed this White Peony to develop a much thicker, richer mouthfeel and an overall sweetness that doesn’t exist in younger White Peony teas


This was our feature tea for issue #4 of our Tea Discovery Club and as we have a few cakes left, we\'re doing a limited release of this tea.


TASTING NOTES


A delicate floral aroma soon gives way to a thick, caramel-like sweetness, finishing with a light fruitiness that lingers on your palette.


PREPARATION NOTES


 


Preferred method: Gongfu Brew


5g per 120ml of water 90 degrees Celsius 15 – 20 sec steeps per infusion


*First infusion is a quick 3 – 5 sec rinse and isn\'t drunk.


Teapot Steep


5g per 300ml of water 90 degrees Celsius 2.5min steep


Cold Brew


8g per 500ml of water Cold water 12hrs in the fridge


STORAGE


Proper tea storage is super important. Improper storage leads to flat, flavourless and potentially weird tasting tea. So as a rule of thumb, keep your tea leaves in an airtight container (the less air inside the better) and away from heat, light, moisture and strong odours.
